
Diced Kick’n ChickenSausage Breakfast Burrito
Ingredients
- 1 pack diced KICK’N CHICKEN sausage
- 4 flour tortilla shell
- 3 teaspoon canola oil
- 4 eggs (scramble)
- 1 red pepper (sliced thin)
- 1 green pepper (sliced thin)
- ½ red onion
- ½ teaspoon onion powder
- ¼ teaspoon of chili flakes
- salt and fresh ground pepper
- ½ cup of Colby jack cheese
- 1 cup drained, rinsed canned black beans
- Nonstick spray
- ¼ cup sour cream
- ¼ cup salsa
- 1 tomato (diced)
- Hot sauce

- Servings: 4
- Heat canola oil in a large pan over medium heat. Cook peppers and onions are softened for about 7 minutes. Add black beans, red pepper flakes, and seasoning and heat until warm for 4 minutes. Transfer to a bowl.
- Whisk eggs then stir in cheese. spray the skillet with cooking oil spray and reheat the skillet over medium heat. Reduce heat to low and add eggs, scrambling until cooked. Spread each tortilla with sour and salsa, then layer with black beans, then added scrambled eggs, and some diced tomatoes. Season with hot sauce. Roll up burrito and serve.
